Head chef Shane Hughes has a platform from which to perform at Ynyshir. He really respects his ingredients and loves using the amazing produce available on his doorstep to practise the skills he has honed throughout his career. Shane creates dishes which simply show the beauty of the ingredients, using modern techniques but not letting modernity to be the first priority.
Shane goes out to gather the wild sorrell, samphire and garlic, and he picks amazing asparagus, luciuous raspberries and beautiful blackcurrants from the garden. He also meets the fishermen to get the lobsters and collects his game from the local shoot. Evertrhing from his jams, pasta, fabulous breads and brioches to the chocolates and petit fours are all made in the kitchens at Ynyshir. Shane is a wonderful example of what customers truly want, personal attention and wonderful food.
