Peter Jackson’s name has long been synonymous with good cooking in Wales. He is head chef here, as well as one of the owners, and somehow manages to combine that with a leading role in the Welsh culinary team which has scored some extraordinary successes under his stewardship. As one might imagine, this is very accomplished cooking, sometimes intricate and always beautifully presented. Much is made of the hotel’s excellent kitchen garden as well as the excellent raw materials available from the wider area.

All this shines through in dishes such as local seafood and courgette nage with aioli, and wild seatrout fillet with wilted greens, saffron potatoes and a parsley sauce. Desserts tend to be wonderfully indulgent, like strawberry and raspberry roulade with thick vanilla cream. The dinner menu also offers a suggested wine for each course, selected from a comprehensive and high- quality list.
