Tyddyn Llan has long been in the upper echelons of Welsh country house hotels, but in the past couple of years its reputation has strengthened still further under the ownership of Bryan and Susan Webb. Bryan is well known to foodies way beyond the borders of Wales, most notably for his celebrated London restaurant Hilaire. South Kensington’s loss has been mid-Wales’ gain with Bryan in the kitchen knocking out the kind of cooking that people will rightly travel miles to experience. The style is refined and skilful, but without being guilty of over-complication and pretension. A meal might comprise starters of salad of stuffed pigs trotter, foie gras and celeriac remoulade or langoustine with chick pea, coriander and olive oil sauce followed by a main course of roast pigeon with braised butter beans, savoy cabbage and morels or roast wild bass with laverbread butter sauce. Desserts range from an elegant version of steamed ginger pudding to a classic pannacotta with rhubarb. All this takes place in a charming Georgian country house, set in rolling countryside, with delightful gardens to explore. A very special place.
